Spicy Autumn Sweet Potato Soup
Serves: 4
You will need: 400g tin cannellini beans rinsed
350g sweet potatoes, peeled & diced
350g carrots, peeled & diced
1 & 3/4 cups of water/coconut milk
1 teaspoon ground coriander
1/4 teaspoon dried crushed or fresh chilli
1/2 tsp coconut sugar or rice malt syrup
Pinch himalayan salt
2 tablespoons lime juice
1 tablespoon chives or spring onion
Let’s make it:
Steam sweet potatoes & carrots until tender adding beans, chilli & spring onion for the final minute to tender. Purée the mixture in a food processor, adding lime juice and salt. Serve topped with added fresh chilli & chives/spring onion or coconut cream optional.
