Vanilla & Blueberry Chia Pudding

SERVES: 1
You will need:
• 1/2 very ripe medium-sized banana & 1/2 a cup of blueberries
• 2 tbsp. chia seeds
• 1/4 tsp. pure vanilla extract
• 3/4 cup almond milk
• Stevia to taste
• Optional: additional kiwi or fruit of choice, nuts, etc
• Optional: add 1tbsp of organic vegan protein powder
Let’s make it:
In a medium bowl, add the banana and blueberries. Mash it with the back of a fork.
Combine separately chia seeds, stevia, vanilla and almond milk.
Mix well, ensuring chia seeds are evenly distributed. Layer banana and blueberries. Cover the bowl. Refrigerate overnight, or at least 3/4 hours. Stir well. Serve cold. Optional: Top or layer with fruit, nuts, etc.
