Oaty Coconut  Lunch  Box  Biscuits

O a t y  C o c o n u t  L u n c h  B o x   B i s c u i t s





Y o u  w i l l  n e e d:


250g (2 1/2 cups) organic rolled oats

35g (1/2 cup) organic shredded coconut

40g (1/4 cup) pepitas

1 1/2 teaspoons ground cinnamon

110g (2/3 cup) dried pitted dates, chopped

80g (1/2 cup) raw cashews, roughly chopped (nut free school version swap seeds of choice, sunflower, seseame etc)

60ml (1/4 cup) coconut oil

175g (1/2 cup) maple or coconut syrup

1 teaspoon natural vanilla extract

2 tablespoons chia seeds (pre soaked into a gel)


L e t s  m a k e  i t:

Pre soak chia seeds in 6 tablespoons of water for at least 15 minutes. Preheat oven. Line a baking tray with baking paper. Place dry ingredients to a mixing bowl. Add maple or coconut syrup, chia gel, coconut oil and vanilla, mix until all ingredients are well combined. Add table spoons of water if needed. Using slightly wet hands, roll spoons of mixture and slightly press with the back of a spoon onto the tray.


Bake in oven 160°C for 20 minutes, or until an even golden brown. Set aside to cool.
