Breakfast Bananarama Bread

PREP TIME: 5-10 MINUTES

COOK TIME: 40 MINUTES

SERVES: approx 10 slices

 

You will need:

300g ripe banana

3 organic eggs

60g maple syrup

60ml unrefined coconut oil

1 teaspoon pure vanilla essence

1/2 teaspoon ground cinnamon

1/2 teaspoon baking soda

1 tablespoon lemon juice

225g almond meal

Optional mixed crushed nuts and seeds for topping

 

Let’s make it:

Preheat the oven to 160°C and line a loaf tin with baking paper or grease a silicone loaf pan with coconut oil.

Add banana, maple, coconut oil, cinnamon, vanilla, eggs, baking soda, and lemon (lemon activates the baking soda) into a large bowl, blender or food processer and combine. If mixing by hand mash banana prior. Add the almond meal and mix well.

Pour the mixture into your loaf tin, sprinkle the chopped nuts and seeds on top if desired and bake for approx 40 minutes, or until the loaf is golden brown checking with a skewer that the inside is cooked through. Cover the top in baking paper if over browning.

Cool before slicing, and store in an airtight container in the fridge for approx up to 5 days or pop in the freezer.
