Do-nut Skip Breakfast Donut

You will need:

1 cup almond Flour

2 organic eggs

1/3 cup of stevia

1/4 cup unrefined coconut oil (melted)

1/2 teaspoon pure vanilla essence

1/2 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/8 teaspoon himalayan salt

1/4 cup unsweetened organic almond milk

 

*Cinnamon Coating

1/2 cup of stevia

1 teaspoon ground cinnamon

3 tablespoons unrefined coconut oil (melted)

 

*Chocolate Coating

1/2 cup of stevia

1 teaspoon organic cacao powder

3 tablespoons unrefined coconut oil (melted)

 

Let’s make it:

Preheat the oven to 160°C and grease a silicone donut pan with coconut oil.

Add, cinnamon, baking soda, almond flour and stevia into a large bowl, and combine.

 

In a separate bowl whisk coconut oil, eggs, almond milk and vanilla essence, then add to the dry mixture and combine.

Transfer batter to donut pan, filling each hole 3/4 full. Bake for approx. 15 minutes or until golden brown. Cool then remove from pan.

In the meantime, *Cinnamon Coating

stir together stevia and coconut oil, once donuts are cooled and removed brush donuts in oil and stevia mixture, then sprinkle and press cinnamon to coat.

*Choc Coating stir together stevia, cacao and coconut oil, once donuts are cooled and removed brush donuts in oil and stevia mixture, optional sprinkle in crushed nuts or coconut flakes.
