Chocolate Nice Cream

PREP TIME: 4-6 hours (freezing required)

COOK TIME: 0 minutes

SERVES: 1 tub of ice cream

You will need:

1 1/2 cups coconut cream

1/2 cup pitted medjool dates

1/3 rice malt syrup or honey

3/4 cup raw cacao powder

2 tsp natural vanilla extract

Pinch of pink Himalayan salt

1/2 cup natural cacao nibs

Stevia (optional)

Let’s make it:

In a food processor or blender, add coconut cream, honey and vanilla extract and blend until well combined. Slowly add cacao powder, dates and salt. Blend well for 30-60 seconds until completely smooth. Pour into freezer safe container, top with cacao nibs and freeze for 4-6 hours.
