Gooey Choc Almond Butter Cookies

COOK TIME: 10-12 minutes

SERVES: 10-18

You will need:

2 large ripe bananas 3/4 of a cup mashed

1 cup almond meal or coconut flour

4 tbsp natural nut butter (or nut-free)

2 tbsp raw cacao powder

2/3 cup rice malt syrup, honey or stevia to taste (for sugar free)

1 tsp natural vanilla extract

1 tsp baking powder

1/8 tsp pink Himalayan salt

1 egg (or flax egg for vegan alternative)

4 tbsp almond butter

Let’s make it:

Preheat oven to 180°C. Mash bananas until smooth then whisk in egg. Add remaining wet ingredients (nut butter, malt syrup and vanilla extract). Add dry ingredients (almond meal, cacao, baking powder and salt). Mix well then divide into portions (depending on desired size) roll into balls and flatten onto a lined baking tray and cook for 10-12 minutes or until browned. If unsure, break a cookie in half to check. Let cool for 5-10 minutes. Add almond butter to cookies and enjoy.
