No Bake Tarts with Mango and Passionfruit Tropical Puree

PREP TIME: 90 minutes

COOK TIME: 0 minutes

SERVES: 6-10 depending on size

You will need:

Crust

2 cups pitted dates

1/2 cup sunflower butter (home-made or purchased)

1 tbsp water

Tropical Puree

1 tin passionfruit

1/2 cup mango (fresh or frozen)

1 tbsp extra virgin coconut oil (should help puree to harden at fridge temp)

1/2 cup coconut cream

1 tsp natural vanilla extract

Mini cherries (optional)

Let’s make it:

For the crust, combine dates, sunflower butter, water and combine in a blender or food processor. Refrigerate in pie crust moulds for 1 hour. Meanwhile, blend puree ingredients together until smooth and creamy. Add puree to date crust and top with mini cherries (optional).
