Chocolate Coconut Kingstons


Coconut Chocolate Kingston Biscuits

PREP TIME: 10 minutes

COOK TIME: 20-25 minutes

SERVES: 10-12 biscuits together

You will need:


1 cup chickpea flour

1 cup desiccated coconut

1 cup shredded coconut

1/2 cup plant milk

1/3 cup raw organic honey, rice malt syrup or stevia to taste

2 tsp natural vanilla extract

Chocolate Filling

1 cup raw organic cacao nibs

1 cup coconut cream

3 tbsp extra virgin coconut oil

Pinch pink Himalayan salt

Let’s make it:

Preheat oven to 180°C. In a large mixing bowl, mix together dry ingredients. Mix in wet ingredients, it should be relatively dry but hold together. On a baking tray lined with baking paper, shape biscuits and press to flatten. Bake for 20-25 minutes. Set aside to cool for 10-15 minutes. Meanwhile, make the chocolate filling by melting ingredients and mixing together until smooth and shiny. To make Kingston ‘sandwich’, grab two biscuits and spread around 2 tsp of chocolate filling on the flat side (the side that was touching the baking tray) of one biscuit, then with the other biscuit’s flat side, place together like a sandwich. Keep in a cool place.
