Mini Coconut Pikelets

PREP TIME: 5 minutes

COOK TIME: 10-12 minutes

SERVES: 3-4

You will need:

2 free range eggs

1/2 cup coconut flour

3/4 cup almond milk

1-2tbsp extra virgin coconut oil

1/2 cup coconut yoghurt

1/3 cup flaked/slithered almonds

2 tbsp raw organic natural honey

2 tbsp desiccated coconut

Let’s make it:

Place the eggs, coconut flour and almond milk in a blender and blitz until well combined. If you do not have a blender, mix thoroughly with a whisk in a bowl. Heat a large frying pan over a medium heat. Melt 1 tablespoon of oil, then dropspoonfuls of batter into the pan. You may be able to get 4 – 6 piklets in the pan depending on the size of your pan. Cook for 2 – 3 minutes on one side and then flip to cook the other side.When both sides are golden brown and the batter has cooked through, remove from the pan. Repeat the process. Serve withcoconut yoghurt, honey, slithered almonds and desiccated coconut.
