Nourishing Broth Laksa

PREP TIME: 10 minutes

COOK TIME: 20-25 minutes


You will need:

2 teaspoons extra virgin olive oil

1 garlic clove crushed

1 spring onion

2 teaspoons fresh ginger

1 fresh chilli (optional)

Juice from 1 lime  

200g raw prawns (substitute for tinned well rinsed beans of choice i.e chickpeas, lentils)

100g zucchini noodles

200ml low sodium natural chicken/vegetable stock (or home-made broth)

300ml organic coconut milk

1/2 a medium carrot chopped to matchsticks

1 cup pumpkin diced

Chopped coriander to serve (optional)

Let’s make it:

Heat the oil in a large saucepan on medium. Add garlic, spring onion, ginger and chill and cook on medium heat for a few minutes until aromatic. Squeeze in lime juice and then add prawns. Add coconut milk and stock to saucepan simmer gently for around 5 minutes until the prawns are pink. Add thenoodles to the saucepan and cook for 5 minutes until softened. Season to taste then serve in a bowl topped with coriander and carrot matchsticks.
