Pumpkin Spice Pie w/Pecan Crust

You will need:

Crust

2 cups pecans

1 egg

1 tbsp natural raw honey or organic natural rice malt syrup

1 tsp cinnamon

1 tbsp extra virgin coconut oil

Pinch pink Himalayan salt

Filling

2 cups cooked pumpkin

1 cup coconut milk

3 eggs

1 tbsp natural raw honey or organic natural rice malt syrup

1 1/2 tsp cinnamon

1 tsp nutmeg

1 tsp ground ginger

Pinch cloves

Pinch pepper

Pinch pink Himalayan salt

Let’s make it:

Preheat oven to 180°C and grease a pie dish with extra virgin coconut oil. Place all of crust ingredients in a food processor and blend until it comes together and forms a ball. Flatten with hands and cover the pie dish. Then prick the base with a fork and bake for 15 minutes.

Meanwhile, make the filling and place ingredients in food processor and blend until smooth and creamy. Remove the pie crust from the oven and allow to cool for around 5 minutes. Add pie filling to the crust and cook for 45 minutes or until the pie has set. Remove from oven and allow to cool completely before refrigerating to firm.
