Raisin toast loaf w/ coconut icing

PREP TIME: 5 minutes

COOK TIME: 20-25 minutes

SERVES: 10-12 slices

You will need:

Loaf:

3 cups buckwheat or chickpea flour

2 tsp gluten-free baking powder

1/2 cup extra virgin coconut oil

1 1/2 cups coconut milk

1/4 cup organic maple syrup or natural organic honey

2 tsp natural vanilla extract

1 tsp ground cinnamon

Pinch nutmeg and allspice

1 1/2 cups raisins if you want to go traditional

Icing:

2 cups coconut cream

4 tbsp coconut oil

3 tbsp coconut flour

1/2 cup desiccated coconut

Let’s make it:

Preheat your oven to 180°C fan forced. Firstly, combine all the dry ingredients in a bowl. Then mix in the wet ingredients gently. Stir in the raisins to evenly distribute. Add to a cake tin and bake for 20-25 minutes. Allow to cool for 10-15 minutes. To make the icing, melt the coconut oil and mix with the coconut cream and flour. Add to the top raisin loaf evenly and then sprinkle the desiccated coconut over the top.
