Winter Warmer Wheat-free Pizza

PREP TIME: 20 minutes

COOK TIME: 15-20 minutes


You will need:

Pizza base

1 cup chickpea or buckwheat flour

1 tsp baking powder

4 tbsp water

1/2 tsp pink Himalayan salt

1 tbsp extra virgin olive oil

Toppings (optional of choice)

4 tbsp extra virgin olive oil

1/2 cup natural tomato paste

3-4 sundried, cherry or roma tomatoes

1/2 cup of rocket

1/2 cup red onion thinly sliced

Fresh basil or parsley to serve

1/4 cup mozzarella cheese or vegan option nutritional yeast

Let’s make it:

To make the pizza bases, add flour and salt to a medium bowl. Start adding water, one tbsp at a time and keep stirring.  If it is too wet, add some more flour (1 tbsp at a time) and if it is too dry, add more water. When the consistency is right and it can be kneaded, knead on a floured surface i.e bench top. Divide dough into 4-6 small balls. Roll into a round shape around 1/2 cm thick. When finished, lightly grease each basewith a small amount of olive oil. Add oil to a non-stick frying pan on medium heat and cook each base for 1-2 minutes or until golden.

Then, add tomato paste and a drizzle of olive oil on pizza bases. Add remaining ingredients evenly across the bases. Bake for 10-15 minutes approx. 180 degrees or until golden brown and toppings are heated through.
