Rocky Road Bites


Pink Rocky Road Bites

PREP TIME: 10 minutes

COOK TIME: 5 minutes

SERVES: 15-25 bites depending on size

You will need:

Jelly

150g strawberries

1/2 lemon (skin removed)

125g water

2 tsp agar agar powder

50g coconut sugar or stevia (to taste)

chocolate 

 

1 cup  cocoa butter

1 cup cocao powder

½ cup  honey, rice malt syrupto taste using half this amount or less will make a bittersweet chocolate

1 tsp  natural vanilla extract or other flavors to taste

pistachios crushed (optional)

Lets make it:

Jelly.

Place strawberries and lemon into mixing bowl and puree. Pour into small bowl and set aside.

Pour 125g water into mixing bowl and add 2 tsp agar agar powder and 50 g coconut sugar stevia or  sweetener of choice. Leave to soak for approximately 10 mins.

Simmer for approx 7 mins. Add in strawberry puree. 

Pour into small moulds and place into fridge to cool and set.

Chocolate.

In a a glass bowl on top of a small pan with an inch of water in the bottom, melt cocoa butter over medium heat. Make sure that the water isn’t touching the bowl.
When the cocao butter is completely melted, remove from heat and add cocoa powder, vanilla, and other flavor extracts.
Allow it to cool slightly. When it has cooled enough to thicken to the same thickness of the honey you are using, stir in the honey. If using a solid raw honey, melt with the cocoa butter.
Make sure all ingredients are well incorporated and smooth. At this point, make sure that no water or liquid gets in to the chocolate as it can cause the texture to get mealy!
Pour the chocolate into molds, once cooled but not set add chopped jelly and pistachios, then refrigerate until firm.
