Fig w/Berry Cream Waffles 

PREP TIME: 10 minutes

COOK TIME: 10-15 minutes

SERVES: approx. 6 waffles

You will need:


1 cup buckwheat flour

1/2 cup flaxseed meal

1 cup organic almond milk

3 tbsp sunflower butter or natural nut/seed butter of choice

1 free range egg

1 tsp natural vanilla extract

Pinch baking powder

Pinch stevia

Fig & Berry Cream

1 cup organic coconut cream

1/4 cup organic mixed berries

Flesh of 1 1/2 figs

1 tbsp natural maple syrup

Let’s make it:

Preheat waffle maker and a low to medium heat while you prepare the mixture. Mix dry ingredients together. Add in wet ingredients and mix well to combine. Spray or coat your waffle iron with oil. Place rounded tablespoons of the batter on the waffle iron, leaving room for the waffles to spread slightly. Close the lid and cook until lightly browned, about 3-5 minutes. Repeat with all mixture.

Meanwhile, in a blender, add mixed berries and fig with a small amount of water to make a berry puree, or, mash with a fork. Then, in a bowl, whip coconut cream with maple syrup, berries and maple syrup. Serve waffles with a dollop of berry and fig cream and sliced fig.
