Hazelnut Mini Mars

You will need:

1 cup almond meal

1 cup desiccated coconut

4 tbsp extra virgin coconut oil

1/3 cup raw organic natural honey

1 tbsp natural vanilla extract

1 cup hazelnuts

Pinch pink Himalayan salt

Chocolate layer

1 cup raw organic cacao powder

1/4 cup extra virgin coconut oil

2 tbsp raw organic natural honey

1tbsp almond milk

Pinch pink Himalayan salt

Let’s make it:

Preheat oven to 160°C. In a food processor or by hand, mix together almond meal, coconut, coconut oil, honey, vanilla and salt together. Add to silicone rectangle moulds, or a muffin style tin. Fill with mixture and place a hazelnut in the middle of each by pressing in. Bake for 8-10 minutes until set around the edges. Allow to cool for 1 hour. Melt coconut oil, honey and cacao powder together in a saucepan on low heat. Remove logs from moulds or tray and carefully dip all sides in the chocolate mixture. You can transfer the chocolate mixture to a shallow dish and use a spoon to help flip the logs. Repeat with remaining logs in the chocolate mixture. Drizzle remaining chocolate over the logs with a fork drizzling back and forth. Store in an airtight container.
