Zesty Orange w/Choc Chip Biscuits

COOK TIME: 15-20 minutes

SERVES: approx. 10 biscuits

You will need:

2 cups buckwheat flour

1/4 cup extra virgin coconut oil

1 egg

3 tbsp organic almond milk

1/4 cup raw organic natural honey

Juice and zest of 3 oranges

1/4 cup raw organic cacao nibs

Pinch pink Himalayan salt

Let’s make it:

Preheat oven to 180°C. Mix together buckwheat flour and cacao nibs in a large mixing bowl. Whisk egg into mixture along with almond milk, coconut oil, salt, honey and juice of oranges. The mixture should hold together but be crumbly. Roll into biscuit shape and place on a baking tray lined with parchment paper allowing some space between. Bake for 15-20 minutes or until golden brown.
