Choc Chip Ice Cream Sandwiches
PREP TIME: 5 minutes
COOK TIME: 17-20 minutes
SERVES: 12-14 cookies
You will need:
3 cups almond meal
3/4 cup almond milk
1 cup raw organic cacao nibs
1 egg or egg replacement
Pinch baking powder
4 tbsp extra virgin coconut oil
1 tbsp natural vanilla extract
3 tbsp natural raw organic honey or rice malt syrup
1/2 tbsp coconut sugar (optional)
Dairy free ice cream of choice ie. panned organic, or home made nice cream.
Let’s make it:
Preheat oven to 180°C. Mix together almond meal, baking powder, coconut sugar and cacao nibs together. Mix in remaining wet ingredients until combined. Flatten cookie mixture on baking trays lined with parchment paper leaving space between. Bake for 17-20 minutes or until golden brown. Allow to cool for 15-20 minutes. When ready to serve, place cookie face down leaving the flat side facing upwards, scoop around a tablespoon of your ice cream choice on the cookie and place the flat side of another cookie onto ice cream to create the sandwich
