Salted Caramel Fudge

PREP TIME: 10 minutes

SET TIME: Approx 2 hours 

You will need:

Fudge layer

1.5 cups raw almond or cashew butter (unsalted and at room temperature)

6 tablespoons organic virgin coconut oil

3 tablespoons raw honey

3/4 teaspoon fine sea salt

1 tsp natural vanilla extract

Chocolate layer

1 cup organic virgin coconut oil melted

1/2 cup organic coconut cream (room temperature

1/2 cup raw organic cacao powder 

1/4 cup coconut sugar, honey or stevia for sugar free

1 pinch Himalayan salt

1/4 tsp natural vanilla extract

Let’s make it:

Mix fudge layer together by hand or in a blender/food processor. In a baking or cake/slice tin lined with parchment paper, press mixture in evenly. Refrigerate for 1-2 hours.

To make chocolate layer, add ingredients to blender and blend smooth, top fudge and place back into the fridge until set. Can also be frozen.
